Valentine’s Day is almost here and love is in the air. You do not have to spend all day baking and cooking on Valentine’s Day to enjoy yummy treats. Here are six very easy yet super healthy ideas you can enjoy this Valentine’s Day and the best part – guilt free! They all take no time yet your loved ones will appreciate all the love you put into them.
1.Berries With Whipped Topping
This is so easy and yet a much appreciated dessert we all love. Pick your favorite inseason berry (or mix a combo) like blueberries, strawberries, raspberries and blackberries. Give them a good wash and dry. Serve in festive parfait dishes and top with your favorite whipped topping. I like coconut whipped cream. Serve with a fresh sprig of mint or add some heart shaped sprinkles. Packed with lots of nutrients, vitamins and dietary fiber.
2.Fig Kisses
An all natural chocolate kiss you can feel good about. These are just the cutest things ever. At least that is what everyone says when they try one! Figs are are low in calories (around 70-100), high in soluble dietary fiber and loaded with minerals and vitamins. Pick your favorite variety (clean and dry them first) and simply dip in melted chocolate of your choice. I like to use organic and raw chocolate 70% or higher. Let sit and enjoy.
3.Heart Shaped Gluten Free Pancakes
You’ll love this recipe. Only four ingredients. This is great to surprise a loved one with first thing in the morning. This recipe is super healthy and takes no time to whip up. Add any favorite toppings of your choice. Serves 1.
1 ripe banana, beaten with a fork.
2 tbs of coconut flour, (or you can use any flour you want).
2 organic eggs, lightly beaten.
1/4 cup of milk- use more if you want to thin out the batter.
coconut oil for the cooking pan OR (cooking spray) is fine too.
Top with all your favorites; chocolate chips, fruit, pure maple syrup or honey.
In one bowl; add the banana and mash up well with a fork. Next add the coconut flour. Mix well. Next add the 2 eggs, and mix lightly but until well combined. Now add in the 1/4 cup of milk-I use almond milk. If you are going to add in anything else- do so now. Heat over low-medium heat. Top with fruit or anything else you like.
4.Wholesome Fruit And Nut Bars
This is great if you have absolutely no time to make a healthier treat but want to indulge on Valentine’s Day. They key is to read your labels and make sure you can pronounce every ingredient in a bar. My favorite wholesome bar is KIND with flavors like peanut butter dark chocolate and raspberry cashew & chia. Then I like to cut them up and eat them as squares of chocolate. Who needs a box of expensive chocolates when you can do this.
5.Chocolate Covered Strawberries
Who doesn’t love this classic. Simply melt organic or raw chocolate and dip organic strawberries in. Set in fridge to cool. To get extra fancy you can then drizzle white chocolate over. These are always adored and devoured on Valentine’s Day. They always give off the impression that you were in the kitchen all day too. Your little secret that you were not!
6.Dried Fruit Dipped In Chocolate
You can do this with any fruit but I like to use dried oranges and dip them in organic chocolate. The flavor combo is outrageously refreshing and so very delicious. This is a treat packed with antioxidants and takes less than 5 minutes. This treat is always impressive, beautiful and very elegant. Great to put out if you are hosting something special and travels well.
Hopefully you can try out some of these ideas and have a healthy but also decadent Valentine’s Day!
